how did you guys/gals cook your Turkey?

How did you guys/gals cook your Turkey this year?  I brined mine and will repeat. It was a 19 pounder since we had 12 adults and 3 kids. Brine consisted of:

 

11 cups water

6 garlic cloves

.25 cup allspice

2.5 cups kosher salt

2 large white onions

Tablespoon whole cloves

.25 cup olive oil

2 cups chicken broth

3 celery stalks cut in half

A double deuce of Samuel Smith Nut Brown Ale

2 cups ice

 

Add everything but beer and ice in a pot and boil. Pull off the heat and add the beer and ice.  Once cool, add the turkey to a brine bag and pour the brine in. Let it marinate for a good 24 hours.

 

I cooked the this one on the grill on indirect heat.  About 350 for 3.5 hours until it was 160 degrees and let it rest for 30.

 

Absolutely stellar turkey. Juicy and flavorful.

Brined and roasted. I don't really care for smoked poultry.

 

Brine was a gallon of vegetable stock, cup brown sugar, cup salt, candied ginger, peppercorns and allspice. stuffed with a cut up apple and onion, sage and rosemary.
