Here's the thing, the defense knows that everyone and their mom knows their good and the coaching staff knows that if put into a bad situation the defense will bail them out.  On the flip side, going for it on these 4th and 1's tell the offense that the coaches trust them to do their job and get the first, so in a way it's the coaching staff showing they have faith in both units when they go for it on 4th down.  This gets them pumped up, especially when they make it.
