if you like Cornell, try Roadside Chicken...

 

 

 

ROADSIDE CHICKEN
1 cup white vinegar 
1/2 cup veg oil 
1/4 cup worcestershire sauce 
1 TBS Sea or Kosher salt 
1 TBS white sugar 
1 tsp garlic powder 
1 tsp onion powder 
1 tsp white pepper 
1/2 tsp celery salt 
Mix/shake till well dissolved. I put mine in a old worcestershire bottle with the shaker top. You can marrinate the chicken in the sauce for up to 2-8 hrs before cooking. If so discard marinade and make fresh for the cooking sauce. I apply the sauce every 5 min to both sides and turn every 5-10 min. Apply one final coating 5 min before removing from the grill. You can't put too much sauce on while grilling. It will build up a nice layer of flavors. I use the kettle but i think it would do well on the WSM (Larry used it) with no water pan and a high heat cook. I usally add one small piece of apple wood while grilling also. Hope you like it. EDIT: If you are going to marinate the chicken first, then leave the oil out for the marinade proccess. Make up a fresh batch for basting the chicken with the oil in the sauce.

I put a boston butt on the smoker last night at 11pm.

 

Sitting at about 170 right now, will take it up to 190 then wrap in foil and a towel and put in a cooler for an hour or so.

 

Pull it and eat with cheap white hamburger buns, homemade sauce, and slaw.

 

Making some BBQ baked beans with onions, peppers, and bacon to go with it.

 

Lot's of Sweetwater mixed brews.

I want to but a boston butt on the charcoal grill to cook, but I haven't mastered the ability to hold a low temp with charcoal yet, so I haven't attempted it

 

Go get you a cheap electric smoker.

 

You won't believe what you can do with it.

 

Best chicken, turkey breast, sausage, pork roasts and butts....etc...pretty much everytihng.

Break down and buy a Weber Smokey Mountain... Trust me, you won't regret it if you want to learn how to cook meat on a smoker.

I cook one almost every tail gate for our home games. It depends how many pounds your shoulder is for how long to cook it. But for low temps use indirect heat with little charcoal and more wood chips. But I usually like to cook mines faster for tailgating so I use more charcoal.

Define cheap.. Do you set it the night before and just let it cook overnight unattended?

I put it on at 11 or so, stay awake until about 1 to make sure the temp and smoke are right, and go to bed.

 

I have mine on a paver area in the yard away from the house or deck so no worries from me.

 

Woke up this morning, stuck a thermo in her and she was at 165 or so.  Wrapped in foil with a little bit of apple juice in there and took her to 193.

 

Pulled her, wrapped her in a beach towel and put it in a cooler to let the juices redistribute through the meat.

 

Should be perfect in 30 minutes.

I don't do them enough to master it, but they usually turn out pretty well. I tend to undercook them more than over. Last time I held a gas grill at 225, cooked indirect for about 10 hours and it still wasn't done. I think I'll aim for closer to 275 next time.
