I get what you're saying but its not like were over here touting Popeye's Chicken (Louisiana Fast).  Bojangles is our thing and they just happen to call their mildly seasoned chicken fillet biscuit "Cajun".  It's delicious and I love it.  Makes me proud to say we do it better than they do and they invented it!

Obvious choice would be Cajun Filet sandwich.

Something out of left field, the "El Kentucky" from Hutch and Harris here in Winston-Salem. It's a huge buttermilk-battered fried chicken breast topped with pepper jack cheese, applewood smoked bacon, pico de gallo, lettuce and tomatoe. It's phenomenal.

Yeah, its the poo. Funny that a lot of people around here have never heard of H&H.
