if the juices are flowing out of your steak and it isn't incredibly tender when you get done grilling it, you're doing it wrong.

Your Probably right. I"m impatient when it comes to grilling. I never let it get hot enough.

I know what you mean. Try getting the grill up to max temp (600+ is preferable) and leave it there for a while before throwing on the steaks. Then throw em on and and sear the sides real quick. Turn the flame off, cover, and let sit until the middle reaches the desired temp. Also, make sure your steaks have sat for a bit before you throw 'em on the grill - room temp - never straight out of the fridge. This is the only way I'll grill steaks because like you, I prefer pan seared for most types of steaks. Usually depends on thickness. I'll never put a thin steak (one inch or less) on the grill.

I have this recipe that a friend of mine gave me that has you searing the steak using Balsamic Vinegar, Shallots , garlic and butter. I tried it one time and never looked back.

And yers I've been guilty of putting the meat on right out of the fridge. Learned my lesson in that one.

bone in ribeye is the best. sorry....

If you can find a good ribeye. Its hit or miss at the grocery store. Tough finding a real butcher shop these days. Oh yeah I will not argue about steak. I really do love it all. I'll throw in a flank steak done right with chimichurri sauce. Hot damn boys that good eatin. I'm hungry now.

Wilfork? No.

I wouldn't mind trading Pep for Ron Brace and the Pats 1st next year. Get Greg Ellis as a stop gap and go for a big time DE in the 1st or 2nd of next years draft. That would work.

All in all, I'd rather have Pep back in '09 than not and that's about 99.999% likely what's going to happen.

Anyone who doesn't know what a Flat Iron Steak is shouldn't be in a steak hijacked thread...
agreed. it's just one of the more underrated cuts of meats that deserves a bit of attention every now and then.

Marinade a flat iron steak in olive oil, fresh crushed garlic, salt, 1 chopped jalepeno pepper (or habenero if you like more heat), cilantro, a shot of vinegar and lime juice. Actually put that on anything and its pure joy.
