I'd suggest going to a walkable neighborhood where you have dining options, different bars, shops, and plenty of other people for people-watching. Give yourself choices so that if you get yourself intoa restaurant and the environment is too stuffy or you want to change the pace, you can say "let's get out of here and go next door" or "let's go see if there's someplace that isn't so dead down the street." point is, like i said, give yourself (and him) some options over the course of the evening. nothing worse than going on a date somewhere and there is no logical next step to take the evening (if you want to keep hanging out but don't want to have the "want to go to my place" conversation yet).

edit: i live in atlanta and am not that familiar with all the neighborhoods in charlotte, otherwise i'd give you specific suggestions
