So what is "Asian food"? Chinese, Japanese, Vietnamese, etc.? I just don't get why no one seems to think of India as an Asian country or culture.

When did the Chinese control most of Asia? Or do you mean SE Asia? To my knowledge, the only empire to control most of Asia at any one time was the Mongol empire.

It's funny you say that. I had a vegetable curry (Japanese style) yesterday and did not miss meat at all. I prefer heavily-spiced dishes, and I've found that most of the flavor comes from the spice with the meat just serving as a filler. I think I could be a vegetarian if I just committed to cooking dishes like this.
