Okay, so when I type "he" on my phone it auto-corrects to ^He...

My phone does this with a lot of words...

Other than turning my auto-correct off... Is there any way to edit the auto corrects in my settings?

I like auto correct for the spell check feature but this poo's getting out of hand.

Nothing really to do outside of turning autocorrect all the way off. The phone will adapt to words you type more frequently and add it to your phones dictionary. When my phone was jail broken there was an app that let you fool around with autocorrect settings but jailbreak wasn't worth it to me honestly.

type h, let it autocorrect, delete it and retype it. i don't think it autocorrects a second time if you delete.
