What do you got? LiaG gave up her chocolate cake recipe, I know some of yous have some delicious how-to's to offer up. I do the cooking around my house, but I was raised Italian and that is what I do most & best. Im trying to broaden my spectrum if you will, and Ive takin a liking to Southern cookin. So give 'em up y'all...

These are the best oatmeal cookies ever

Million Dollar Oatmeal Raisin Cookies

· 3 eggs, beaten

· 1 cup raisins

· 1 teaspoon vanilla extract

· 1 cup butter

· 1 cup packed brown sugar

· 1 cup white sugar

· 2 1/2 cups all-purpose flour

· 1 teaspoon ground cinnamon

· 2 teaspoons baking soda

· 2 cups rolled oats

· 1 cup chopped pecans (optional)

DIRECTIONS

1. Combine eggs, vanilla and raisins in a small bowl; cover and let stand for 1 hour, this is important so don't skip this step.

2. Preheat oven to 350 degrees F.

3. In a large bowl, cream the butter, brown sugar, and white sugar together. Sift together the flour, cinnamon, and baking soda; stir into the creamed mixture. Then stir in the raisin mixture, rolled oats, and nuts.

4. Drop by teaspoonfuls onto a parchment lined cookie sheet. Bake for 10 minutes, or until lightly browned.

Collard Greens

3 bunches fresh collards

1 T minced Garlic

salt & pepper to taste

2 smoked turkey wings or ham hocks

Wash collards until water is clean & cut them into bite size strips.

In a large stock pot cover smoked turkey wings in water and simmer for about 20-30 minutes. Then add the collards, garlic & salt & pepper. Bring to a boil and then simmer until they're tender.

Pinto Beans & Smoked Sausage

2 lbs dry pintos

2 large onions chopped

1 T garlic

2-4 jalapeno peppers

1 lb smoked sausage sliced into bite sized pieces

Put beans, garlic, jalapenos & onions in a crock pot and cover with water. Season with seasoned salt & pepper to taste and cook on high for several hours until the beans are done, about 1 hour before serving add the sausage. Serve over steamed rice.
