Very good mashed potatoes

If you're really lazy and want mashed taters for 1.

Take a large baking potato and wrap it loosely in the plastic bag from the produce dept.

Microwave it for about 12 minutes on high.

It will be molten hot when you take it out so be careful but remove the plastic bag quickly so it doesn't stick to the tater

Mash it in a bowl with some butter and cream and its a very passable mashed tater.

better than instant...

good idea! you can even buy single wrapped ones now for the microwave. I used to do it with baked potatoes and now I do it with sweet potatoes since Im trying to eat better. Its already wrapped and all you gotta do is throw it in there for like 9 mins or whatever it says.

I've had great homemade mashed potatoes before, but I had some really great instants last weekend, and when you factor in prep time/cost, instant cannot be beat.

Deal with it.

There are plenty of stuff you can do to save time.

People store potatoes in water when peeling to keep them from going dark. You can just put them in the water that's in the pot.

Mash potatoes in the pot instead of moving to a bowl. Saves time and cleanup.

You don't have to do anything when bringing the potatoes to a boil. That's not really lost time because it doesn't require participation.

For a tired parent on a weekday I can see the flakes being an option, but even then it's not that much longer. Leisurely weekends go with the real thing.

Just get the good potatoes you don't have to peel. Lots of nutrition in the peelings. I have not peeled a potato in 20 years.
