Halloween. So many horror movies since have taken from that film, and it's shaped modern horror as we know it. Maybe more than any other horror film.

That's not to say I'm a huge fan, as I prefer psychological or supernatural horror to slasher films. But as far as gore goes, Halloween is mild compared to the Jason and Freddy movies.
