That could be true or just a diversion. I really hope the stuff is being taken down for charity. My question is why were they closed on a Saturday night as someone claimed? That's the bigger issue than memorabilia being taken down.

Next time I'm in Charlotte, I hope to give it a try.

they claimed techincal issues...maybe something happened to the coal fired ovens? Just guessing.

I walked by there less than 10 minutes ago. There were 2 men coming out the door, one with a notebook, so I just said "they're closed aren't they?", and he replied "yeah".

I said "for good", and he said "oh yeah". When I asked if he was with the property management he said "yeah".

He seemed real talkative, kinda like a survey, and asked if I had ever eaten there. I said "a couple times". He asked what I thought of it, and I said "a little pricey, and the pizza was burnt to a crisp". He replied "yeah, that's what I hear".

I asked about Sweet Teas and he said it lasted 6 months.

Then he said "bad management, both of them".

I said oh OK and walked on.

Of those, much of that can occur for a long time before catching up with you. The ones that will bite you square in the rear is 1) rent, 2) food cost, and 3) pay roll. (Stealing and portion control will fall under food cost.)

That's the big three.

Of course food quality and service CAN NOT be ignored. I'm not saying it was an issue because I've never been there, but you can run a tight ship on the cost side and get burned on the product and service side.

I USED to want to run my own independent restaurant, but now there's no way. The only way I'll run my own store is if I can franchise, period.

It's amazing when you think of some of the crappy restaurants that have been around forever, such as the Beacon here in Sparkle City.

Some places can last on reputation. I don't understand it considering how many things that can go wrong, and there's a ton...but it happens with 'legendary' restaurants.
