From NC so smoked pork butt is the staple. That said, having a narrow minded view regarding a good brisket is self destructive.  Wouldn’t turn down either one.

It’s a misconception that you can’t get good brisket in NC.  Pork is king around here for sure, but we ain’t no strangers to beef.

Yep. But restaurants are hit and miss with both pork and beef IMO.  Backyard smoker is the best.

Sure is. I got a pellet grill a couple of years ago and it is the easiest thing ever for making excellent butts and shoulders, all that stuff and more. It is kind of unbelievable what comes out if I just follow instructions.

So why are ribs not called bbq?

Ribs definitely are bbq.

What some people call bbq is just any old meat cooked outside on a bbq grill they call it. A charcoal grill. It could be hot dogs and hamburgers and that’s bbq. Those people normally aren’t from the south.

How about this: it's all good.

I can dig it all. I grew up on eastern style and Lexington.  Western NC came later.  I tried authentic Texas BBQ and it was really good too.  I have tried Memphis and KC style, but not the product from the actual areas and while good, I imagine the real stuff is better.  I moved to SC and have grown to even enjoy mustard based pulled pork as well. No, it is just mustard squeezed on top of pork just like eastern style is not just a bottle of vinegar poured over top of the meat.

Mustard BBQ sauce only. Bessingers or Melvin's BBQ sauce.  However Bessingers is the best in the world, Melvin is 2nd.

I found this article

In fact, the New York Times Magazine described the sauce as “terrifically balancing the tangs of mustard and vinegar with a wood fire's charry flavor.” While helping his dad, Joseph “Big Joe” Bessinger, as a teenager in the kitchen of the family's first restaurants, Thomas learned the secret recipe for the gold sauce – ...

People here get mad when I tell them I prefer Miracle Whip over Dukes

I don't get mad because you want that. But when I tried it? Don't worry about me stealing any of yours.

Raised on Dukes but in the day you couldn't get Dukes outside the south, we'd take a few jars up north after visits home. I did used to like the Kraft when they put lemon in it.

The Dukes bbq sauces from different states are pretty cool, they have Alabama white, Tennessee, Georgia, SC and more. The NC one is really good for store bought.

The only thing Kc does well is ribs.. Q39 and Joe’s are the best joints in town.  Q39 does a wet sauced rib and Joes is dry.  I liked Q39 better cause I felt like joes uses msg and that stuff to make the red fake smoke rig appear.

They ain’t got sheeeeeeiat on out pulled pork tho… they try to imitate the vinegar sauce but fail.  Their sweet sauce in pulled pork sucks.

Kc Brisket was pretty meh too.

Ps- their stadium is a trash heap out in the middle of nowhere.
