Quality of BBQ in the USA

I’ll add a bit more.  I met the owner back in 2013 when Saucemans was just starting and he explained to me he used a lot of Asians spices infused with regular BBQ seasonings and it gave unique flavors that just out of this world so I begun experimenting and got into BBQing.

I do mystery meats at my place for fun for anyone who dares and I’d smoke ostrich, deer, buffalo, snake, bear, gator, etc. and let folks guess.  Gator got to be the hardest meat not to screw up.  It should be deep fried really but there’s a way to make decent burnt ends out of it if you do it right.

Brisket is BBQ.  I just googled it after your post and every website says pulled pork and brisket are the original bbq.

There are two different definitions of BBQ, one a verb and one a noun.

The Verb, to cook outdoor or on a grill.  This definition is not used in the Southeast.

The Noun, pork cooked on an fire or grill or some other method that can be used outdoors.  Cooked with one of several different sauces or baste, the best of which is a mixture of tomato sauce and vinegar.
