I never have any clue what to expect out of a UNC football season. We have a really good QB. Beyond that? Anyone's guess is as good as mine.

He lost his main targets and is human (I think) as a player.  He can’t carry a team this mediocre

You don’t know yet about the defense. They’ve got some really talented players on that side of the ball and imho I think most of the transfers out needed to leave. Defense made some coaching adjustments. If the defense can just be  I dunno top 80 good things could happen. 
 

but UNC football is unpredictable and been a wild ride the past couple of years. Some good and some bad. It’s not started out well this year with the ncaa egregiously punishing a player they had previous cleared.

Dude what on earth are you talking about. All upperclassmen OL, including super seniors and a 7th year center. A very good crop of WRs, a really good crop of TEs and a loaded backfield that could be the best group in the ACC. This is not even mentioning the future first rounder Drake Maye. 
 

Defense just needs to be respectable. Hoping the coaching changes and player shuffling help. Cedric Gray is a big time NFL prospect and AA.

I remember how excited we were about our super experienced OL going into Howell's final season too. Turns out those guys were totally carried by the skill position talent around them because they sucked ass and Sam spent his final year running for his life.
