I wasn't living in NC during the inauguration of the Panthers, but how did the organization settle on a panther as our mascot?

Team owner Jerry Richardson's son Mark is the one who tagged the new team the Panthers as well as decided on the black, blue and silver color scheme.

 

Mark explained that he chose the Panthers as the new moniker because "it's a name our family thought signifies what we thought a team should be—powerful, sleek and strong."

The irony is a Panther is actually a Black Jaguar and the Jaguars were inaugurated the same year as the Panthers

And to add (it's a bit of stretch but part of my head cannon) that cougars, jaguars (possibly some melanistic ones-black panthers) used to roam parts of SC, and maybe ventured into NC a time or two.
