I make the stuffing from scratch. Fresh bread, butter, celery, onion, spices. Grew up with giblet stuffing and made it every Thanksgiving. Until my daughter was 10. She saw the giblets uncooked and decided she was never going to touch them ever, cooked or not. So I started making stuffing with and without just for her. She's 34 now and still just throws them out. :) I'll be at her house this year and I'm making the stuffing so again I'll have to make 2 batches. 

MVP of the Thanksgiving dinner? No such thing. All of it. When it was just me and the kids, I kept it simple: turkey, stuffing, mashed potatoes, gravy (from scratch with drippings), cranberry sauce (kids never did like the berries), corn, crescent rolls, pumpkin pie. All things they would eat. And I still like it simple.
