I once returned to a restaurant where I did this and the waitress asked me why I complained to the manager but left a 20% tip. I told her what she does is hard and underappreciated work and she deserved a decent wage, but there were areas I thought she could improve upon. She thanked me and her service was definitely improved.

Under-tipping or not tipping is classless, imo.

The servers who operate on this type of system know who the good ones, and the bad ones are.  They will run the bad/lazy ones out of the there on rails.  I have been a part of this type setup before.

Usually in this system, all of he servers are really good at their jobs, and don't show up strung out, or drunk.  It's pretty normal to average well over 20% per night.

Meaning bartenders working a section while bartending or if im getting alcohol? For the 1st one they automatically start at 4 because I know that's hard. I dont drink so I can't really answer the 2nd.

I bet you are a bad tipper! You probably want to refill your own drink so that you can knock off a couple bucks from tipping the waiter. 

LOL. Cleaning up after my kid, don't make me a bad tipper. I will ask for a broom, or mop if he makes a mess though.

Most people dining in don’t know that the servers are pooling the tips. 

There were lots of people from the school coming over there to eat, Roy Williams and his family etc, lots of very wealthy upper class people who know how to properly tip and a lot of the times they would tip extra - It was just a strategy from management to ensure all customers were treated equally and received the same service. When I bartended, I was a team with the other people behind the bar so we pooled are tips and split it out equally. That’s basically the only way to do it if you are bartending on a busy night.

 I don’t think it would work in a regular type of restaurant regarding servers. Most places will hire almost anyone and the servers are cut throat and you would probably get a lot of fighting and people doing stuff that would fug over your coworkers and customers.

i meant that if people are ordering drinks to made at the bar, the servers also dish out some of their tips to bar tenders. They also share tips with bussers too. Since you dont drink that doesnt apply to you but I know many people dont think of that.

I disagree but that is based on my extreme dislike for the server pay system. Gratuity is not nor should it be voluntary to pay an employee that is underpaid. I mean, what other industry works on a system where the customer voluntarily and DIRECTLY decides an employee's wages?

I don’t know where you go out to eat but if you were to ask for a mop or broom and someone were to give it to you, that employee should be disciplined. That is absurd. It is extremely low class and awkward for a guest to start sweeping up or fuging moping the floor. 

 You are there to enjoy yourself and you are literally paying someone to clean up after you are done. It’s simple manners and proper etiquette. We have a small child and it’s challenging to go out to dinner with him.

If you are 100% committed to the service industry, are good at it, and comfortable working the odd hours - if you can find a good establishment to work in, you can make a very good living for yourself. I’ll never go back to it though. It’s almost like a lifestyle. It’s a tough gig but the world absolutely needs bartenders especially good ones.
