You know who it is going to be thrown to, you don't have to worry about a run and you can focus on the break and maybe even start backpedaling early. The fact he was beaten so badly is a testament to how shifty CMC is given the defender could easily figure out what was coming

This is the reason for all the excitement.  And it's not an anomaly.  We are seeing CMC regularly do whatever he wants against some of the top LB's in the league...as a rookie.  So there absolutely is reason to have high expectations for him.

I would bet no team uses any thing other than a SS to cover him. He is way to fast for Lbs.

I think that Tim Weaver of USA Today had the most meaningful take on this:

Of course these kinds of drills tend to favor the offensive player by definition. However, the insane level of separation that McCaffrey is getting over and over again is going to translate well in a real game.

the sad thing is we're not going to see him on full display until Sept 10th. They're probably making it a point to not throw him a bunch of passes or use him much at WR in pre-season so we're not tipping off the 49ers what were going to do on day 1.
