Happy Birthday @Jeremy Igo!

I too was just diagnosed with incredibly high cholesterol.  Runs in the family.  My father had double bypass surgery at 45.  I have started eating more plant based foods at the recommendation of my doctor...lots and lots of beans and fruits and veggies.  We will see what the result will be in 6 months.  Keep it up man!

I think there's a couple of ways to get good meat. Obviously, the fresher the better. Also obviously not lunch meats or sausages as those are loaded w fats but also other unnatural or undesirable additives. Thirdly, meats or eggs that are not manipulated for assembly line processing is available. It's always more expensive and often hard to find. Basically all eggs that aren't literally free range (cage free is a lie usually) are the same...same with chicken. I personally don't care that much about the treatment of the animal so much (I'm about to eat it) but the effects of the way it lives on its benefits to me.

Obviously steroids and other manipulative practices should be avoided. Meats that are just meat can be hard to find and are definitely more expensive. But I think it's worth it. Depressing what you said about red meat but I think you're right. I've cut way down on it.

@Jeremy Igo 'Eat to Live' is another good book in this vein, especially if you want recommendations for scientific studies and articles. I did it for almost two years and lost almost 100 lbs. Basically, Dr. Fuhrman advocates getting 90% of your calories from unprocessed, plant based food. I'm probably closer to 70% now but it allows me to splurge a little more on weekends and special events like the draft. Everyone has to find the right balance for them. Its not quite the sacrifice some think. After you have done it for a while, you learn how to prepare delicious and satisfying foods that are much healthier. I also eat lots of salads and beans. I definitely agree though, I've never felt better.

Hahaha.....I don't even remember what they looked like. I just remember you and I outside, some ladies walked by, you started spitting game, I went back upstairs, and then 5 minutes later you walked back into the party with the ladies. I was more impressed with that than with Norman showing up to be honest.

I've done this some. The first  week to ten days are toughest then you start to adapt. I didn't test my insulin levels, so I'm not sure how much it helped with insulin production but it did make it easier to maintain a lower calorie intake while still having a larger dinner (I fasted from about 6:00 PM til 11:00AM, so basically just skipping breakfast and no snacking).

I'm getting back into exercising and fixing my diet after being derailed twice over the last two months.  I started a mostly paleo diet about 2 months ago, but then got hit with an emergency appendectomy.  That put me out of the gym for 5 weeks or so.  Then i went off the rails woth my diet while recovering, got back into the gym for a week, then my kids brought home the flu and that put me down for about another week.  Now, I'm back in the gym AGAIN lol, but have to clean up my diet.

The more and more I've read recently has me seriously thinking about making the switch permanently to a vegan/pescetarian diet.  I somewhat suspect that binge eating red meat during my paleo foray may have led to or contributed to my appendix betraying me, and i've been seeing more and more articles on how red meat is a carcinogen, point blank, period.  The most recent article i read cited a study that said they found the digestion of red meats produces a rare sugar that creates inflammation and disease in humans that isn't a byproduct of true carnivores' digestion process.

In the meantime, when you say get a good cut of meat vs processed, what do you mean exactly?  Because in my mind, pretty much all meat is processed to some degree, outside of maybe getting some cuts from the farmer's market or whole foods. Regardless, over the next few months, I'm planning on cutting out red meat, then chicken, and whittling my diet down to just fish, fruits, and veggies.

We get our meat directly from a farm. All animals are fed their natural diets, I chemicals, free range, etc.... You can 100% taste and see the difference. It's incredible. 

Just a little reading on how animals are fed, pumped with hormones, and processed will have you wanting to switch in a second. It's fuging gross.

Yeah, i had recently looked into buying mest and eggs straight from local farms, but one I had looked into freaked me out a little bit, as they said their meats were wrapped without labels and were not covered under USDA regulations.  I also found that all store bought eggs are bleached, whereas they aren't when buying them straight from the source, so they can look kind of gross lol.  I plan on revisiting it once I find the right farm I want to buy from...  i'll probably ask around and see if any of my neighbors have linked up with any of the local farms to kind of nudge me in a comfortable direction.
