I prefer, if I have the time, to cook it off heat to temperature then sear... Same cooking theory as sous vide, just without he vacuum sealing & water bath...

I do this with certain meats, but not normally steak.

My Venezuelan family members make a chimmi churri sauce that will blow yo got dam mind.  I love steak sauces and I love steak plain.  you are allowed to eat it both ways even if they steak costs 90$ and you can still ask for a1, au pouive, bearnaise..I won't judge .   Just eat it and enjoy it and stop telling me what to do.

It took me 15 years to get the wife to stop ordering her steaks well done. It's so dry, she has to put A-1 on it to moisten it back up. Kids, I tell ya what.

 

I finally got her to try a med steak and she loved it. But...she still uses A-1. I love her, but sometimes I just can't watch her eat.

 

Oh, and if you knew anything about Michigan football when Funchess was there. He may have been listed as a TE, but he was a WR. He rarely played in line like a TE, mostly because he was more important as a WR than as a bad blocker.

 

It was bad coaching to try and make him a TE. He is too athletic to waste at TE. I am done. For now anywho.
