Wings on the Grill

As a former worker at Fat Daddy's ...there was nothing better to me that grilled buffolo wings. Cook, dip in the sauce, then back on the grill for a bit. I love it spicy but i dont dig my wings dripping wet.

The guy that mentioned Jerk Sauce is on to something nice also. Same concept. Grill, dip, hit the grill again, then sauce on the side for extra dipping.

I prefer grilled wings to fried wings.  I marinade in italian dressing for a couple of hours, then grill indirect on medium high heat for about 20 mins.  Then I like to turn the heat up and cook direct to get some char on the skin.  Don't leave them alone at this point, lid open, and you watching closely, flipping as you find your grill's hot spots.  Then dunk into sauce and back on the grill indirect till the sauce sets...buffalo sauce is good,  bbq sauces with high sugar content will burn fairly quickly, so keep an eye on those.  I like Texas Pete buffalo sauce, and John Boy and Billy's BBQ sauce.

Slow and low for as long as you want, dip in the sauce of your choosing, put over medium fire to crisp/burn/finish the wings.

Don't put sauce on upfront, as most of it has too much sugar in it.

All you need is S and P for the most part to begin.

Serve with homemade bleu cheese dressing, no frickin ranch.

No oven, you cannot grill in the oven... Season with some salt & pepper, a little cayenne perhaps, some Adobo or your favorite seasoning.. Work a 2-zone grill, sear the wings over the heat then move over to the other side, let them cook... Wings are tough to gauge how long because of the varying size of each wing.. When theyre done, toss them in sauce, Ive been playing with bbq & salsa mixed for a wing sauce.  The Pace peach-mango is pretty fuggin good mixed with some SweetBaby Ray's, just sayin.... Add hot sauce to your sauce mix, Ive been using the TexasPete Cha! with welcomed results.. I dont eat Pace salsa or use TexasPete normally, but these 2 variations work very well with what I throw on the grill.....
