Kickoff or Receive?

Yes, defer and get the ball in the second half. Field position will be very critical in this game. I truly believe that Peyton Manning will not be able to drive 80+ yards on this defense for a TD. If someone told me that the Panthers average starting  field position will be at their own 35 or 40, then I will tell them that we will win by at least 2 TDs.

I know most will want to select "kick" but I believe receiver would be the better option.

What is Denver's biggest weakness on offense? Peyton Manning and their passing game. What is Denver's biggest strength on offense? Running the ball with CJ Anderson (not that their running game is anything special, but if they have any success on offense, it will be due to their run game.)

The way to neutralize their run game and to make sure Peyton throws it 40+ times is to get out to an early lead and continue to build that lead, so that it forces Denver to abandon the run game. With how adept your defense is at taking the ball away, and Peyton's propensity to turn the ball over, that's a recipe for success for your team. Get out to an early 10 or 14 point lead and Peyton is likely to throw you one or two INTs. Then it's game over.

I don't remember exactly what Peyton's postseason record is when he throws 40+ passes, but I remember that it was laughingly bad.

Kick off.

Let the Panthers try to get a turnover, or set the Roberto Duran vs Sugar Ray Leonard tone early (of "No Mas Peyton"), that it's gonna be a long night for the Bronco offense.

This also allows the Panthers offense to get their feel for the game.

The defense being hyper, can be a good thing as their flying all over the place. The offense not so much.

If/when The Panthers get the ball in the 2nd half with a lead, maybe they can bury them at that point!?

You get pie for the old school boxing references.  I enjoyed those days when big name boxing was free on TV.  Anyway, Roberto "Hands of Stone" Duran will forever be remembered for "no mas" but back in the day, he was a pretty badass dude.
