He makes what is described as a travel show something that is people-centric, and described as a food show something that is culture-centric. At the end of the day, that's what it is: a show about people and culture, just told by way of food and travel. I have to give CNN some credit for not fugging up the format and storytelling, which I was very much afraid of as he transitioned from No Reservations to Parts Unknown. The Ethiopia episode that aired a few weeks ago this season is, in my opinion, one of his best.
