I love blue cheese on wings, and that's the only application I find it tasty.  Can't stand it on anything else.

If the wings are done right, you don't need a dressing.  But if you have to choose, then you want blue cheese if they're hot and traditional buffalo flavor, ranch if they're some sort of fruity fusion mango-jerk-zing wings or salty garlicky crap.
