Curious about this recipe.  Have been making the same basic Fajitas recipe for over 20 years. 

1/2 teaspoon kosher salt
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon ground red pepper
3/4 pound large peeled and deveined shrimp 
3 tablespoons canola oil, divided 
2 cups vertically sliced onion 
1 1/2 cups sliced red bell pepper 
(6-inch) flour tortillas 
1/2 cup crema Mexicana or sour cream
jalapeño pepper, thinly sliced (optional)
Lime wedges 
 

Preparation

1. Combine first 5 ingredients in a medium bowl. Add shrimp; toss to coat.

2. Heat 1 1/2 tablespoons oil in a large cast iron skillet over high heat. Add shrimp and cook, stirring occasionally, 4 minutes or until shrimp are done. Remove shrimp from skillet.

3. Add remaining 1 1/2 tablespoons oil to pan. Add onion and cook, stirring often, 2 minutes. Add bell pepper and cook, stirring often, 4 minutes or until softened. Remove skillet from heat and add shrimp, tossing to combine.

Serve on warm tortillas
