Panthers' is correct. Personalisation of a plural or other word that naturally ends in s is performed with a single apostrophe.

I think you would just use "Panthers" no apostrophe. We aren't showing that the Panthers possess the contract; the contract belongs to the player, not the panthers (at least in this sentence). Panthers is just an adjective describing the contract.
