Not necessarily weird, but holy smokes it is an amazing recipe! I would add Julianne cut gala apples to the stuffing and I use my pork dry rub for the outside. Also, it can be cooked on a regular grill or a smoker.

I've made something similar to that before, and yea, it's damn good.  Gotta love pork on pork!

The next time you make a grilled cheese, fry it in mayo instead of butter.  It makes a very crispy grilled cheese.
