Boil it in beer (preferably Guinness or a darker Samuel Adams beer) for 5-7 minutes before you put it on the grill....It makes the brats plump and juicy, less likely to dry out on the grill, with plenty of snap in the lining. I prefer a horseradish sauce as a nice change of pace to mustard.

i feel bad putting really anything on it. sometimes some mustard and rarely some ketchup. every once in a while i will add some hot dog chili on it. when i think about it i love cooking a little onions and sweet peppers in the skillet and topping the brat off with that.

and oh yeah...one in the bun, one one the plate on weekends. during the week it's no buns.
