I do a 30-36 hour slow smoke on a 28-30 lb bird. I marinate every 2-3 hours with Apple cider and inject it too. You can cut it with a spoon when done once you get past the bark. This year, filets (mine is 22 oz.) football and beer. Happy Thanksgiving to me.

 

 

Dang my man Willy, can I come over for a plate?!

 

Well maybe two. Need one for the road too.
