Here's a funny dichotomy...

 

I loved all the old Chinese movies despite the fact they were ridiculously exaggerated.

 

But as a general rule, I absolutely hate 'wire fighting' like you see in a lot of movies today.

City Hunter - Jackie Chan vs Richard Norton

 

movie is cheesy as hell, but I love it. It also has the infamous Jackie in drag fighting as Chun Li scene.

I am amazed it took four pages for someone to mention the Shaw brothers and Five Deadly Venoms. Also glad some people mentioned Ip Man. Just a good movie period. I also think Hero was a really good movie.

I am also staggered that no one has mentioned The 36th Chamber of Shaolin.

One that is more of an action movie but had great martial arts fighting was The Raid: Redemption. If you have not seen it and want to watch an insane balls to the wall action movie, check it out. Takes about 15-20 minutes to set up the premise of the movie then about two hours of nonstop insanity.
