Ryan runs all kinds of poo on defense.  It's not even close to the 3-4 defenses we've seen.  You'll see everything from a 2-3, 3-3, 2-4, 3-4, and a 3-2.  It's no wonder there's no consistency on that defense.

Actually, they have done less exotic packages in the last few games as it seems Payton has reined Ryan in.  You will see more base defenses from him and less blitzes than they ran at the beginning of the year.  They were confusing themselves so much they were giving up huge plays too often.
