Brother in law told me a story about the east vs west bbq.

He said that the tomato based western stuff come through the Indians and the eastern folks did not trust the Indians nor any of the "new" vegetables they were serving up.  Evidently tomatoes were new to the guys down east and they went with what they knew.

not sure if there is any validity to it, but thought it went along with this thread.

Had sauceman's last night for dinner. Had to check it out after reading about it here. I don't take pictures of food so you won't get to see it. When we first walked in we weren't sure where to sit and was a little suprised to see the place empty. They have menus on the tables already so it's up to you look at it and walk to the register when you want to order. The menu was short and to the point. They had BBQ plates and platters and sandwiches. You can order chopped, coarse chopped (a little thicker), and brisket. They also have specialty sandwiches (will probably try one of these if I come back for lunch) and typical southern style sides you'd find at a BBQ joint (mac and cheese, greens, potato salad, etc..). I decided to go with the chopped pork BBQ platter with mac and cheese as a side. The young lady asked me if I wanted white or red slaw so I'm still not understanding what the problem is with this. If you don't like the red slaw don't order it. I chose the white slaw and was satisfied. I love slaw and use it as a measuring stick when deciding to return to a restaurant or not. I'm always skeptical of a restaurant with bad slaw, ESPECIALLY if they primarily sell BBQ. The two included hushpuppies were OK. I prefer my hushpuppies to be a little sweeter but they tasted fresh. Now the mac and chese was awesome. It was baked mac and chese and it was cooked perfectly. I wanted to order an extra side order but wisely decided against it because I didn't really need more. Now on to the BBQ. The serving size was really all I needed and it looked good.. I don't usually complain about this because I believe we should be eating less as a whole. I don't like eating until I'm packed full. I think it's a waste and honestly a selfish thing to do. To me it's no worse that drinking too much and smoking cigarettes. But that topic is for another day. Of course I tried the meat without sauce for the first few bites. You could taste the hickory smoke right off the bat. It was just the right amount of flavor you'd expect from that type of smoked meat. After enjoying a few bites I added dipping sauces. Other than standard texas pete, they had three to choose from. A standard sweet BBQ sauce, a mustard BBQ sauce, and some carolina vinigar. My favorite was the mustard BBQ hands down.

I usually order a beer or two when eating BBQ but decided against it because I had to wake up at 3:30 am this morning. I saw they had a few beers on draft but didn't pay attention to what was tapped. Overall I liked the place and would definitely come back. I want to check out one if their signature sandwiches and take a better look at their draft beers. Also, I've heard the onion rings are really good. I'd give the whole experience a 6 or 7/10. The BBQ wasn't the greatest but was still really good. And don't forget the mac and cheese. I thought it was that good.

Not sure if this has been mentioned; I glanced through the pages rather quickly.

The Q-City Charlotte BBQ Championships are going on this Friday and Saturday (Oct. 17th and 18th).  While you cannot eat the competitor's BBQ (health regulations), there will be a bunch of restaurants with booths where you can try their food.  I've never been, but it sounds like it will be a lot similar to Taste of Charlotte.  The competition winner gets to represent Charlotte at the Memphis competition.
