You could do 'etiquette' like the people movers at the airport. Those that want to ride stay to the right, if you want to walk faster, stay to the left?

Yep. But about 50% of the people on those movers still don't do what they are supposed to

How does everyone feel about escalator etiquette? Should you keep walking or let the metal stairs do the work? They are narrower than I thought they would be.

The rule is you ride escalators and do not walk up/down them but for heaven sake, if you're on a moving walkway at the airport - KEEP WALKING!! It's level....it gets you from point A to B faster.....it's not a ride at Disney World.
