How far in advance do you put your rub on?

 

For pork butt, all I really need is 12 hours before.

 

Homemade rub, and a very thin layer of yellow mustard smeared on it to hod the rub on until it becomes a paste, and dries out into bark.

Put it on last night about 8:30, it was sitting at 175 this morning when I left for work.  Should be done in 3 hours, and I will try to get a couple shots.

Only problem with mesquite is if you don't know what you're doing the meat can get really bitter from it. Applewood is more user friendly.
