  1. The brisket was a big hit. I usually smoke them at 250 for as long as it takes to get them to 200 with a Texas crutch when it stalls (usually around 170 in my experience). But one of my childhood best friends who is career military is in town and really wanted a good smoked brisket. His wife is from Texas and he was stationed there for years. He's tied up this weekend with family stuff though so it had to happen during the week so I had to go off script. I cooked it in a 155 degree sous vide for 36 hours then threw it on the smoker for five hours coming home at lunch to fire up the smoker. Smoked the beans and mac and cheese for an hour then finished them off for about 15 minutes in the oven at 350. Honestly, I think the brisket turned out just as good as usual flavor wise. Presentation wise it didn't develop the smoke ring I usually get but honestly I don't really care. Is it really good to eat? Yes. Okay, winning. When I have the time to man the smoker all day I'll probably still do a straight smoke, but that's also why I usually only do a couple briskets a year. The sous vide cheat will allow for making it more often. Probably gonna try a pork butt with the sous vide to smoker cheat next.
  2. I wouldn't say it's bad but I do think the quality has slipped. They've backed off on the spice IMO for one. The spicy chicken filet used to have a real kick to it.
  3. This is not a game y'all. Puttin' it DOWN today. Also, a new contender for the thread emerges. This is good stuff. A little heavy on the celery salt but other than that it's about perfect for a store bought sauce.
  4. Things change when you're getting paid and are potentially easily replaceable. People have made this argument against kids sitting out meaningless bowl games but I've never seen any evidence of that decision negatively impacting draft stock or the mentality carrying over to the NFL.
  5. Kinda ridiculous to be mad at a college kid protecting his potential pro career. It ain't basketball or soccer. Every time those kids take the field they legitimately risk an injury that could derail any chance of a pro career.
  6. I don't watch enough App games to know but is that a product of his lack of ability in that area or more a product of their offensive system? Some teams just don't really throw to RBs much. I meant just think back to Mike Shula. RBs were basically just treated as extra blockers in his offense. Hell, we all begged for screens until we were blue in the face when Cam was getting teed off on by teams blitzing us.
  7. Dude was a beast in college no doubt. Definitely curious to see how he looks in the NFL. I definitely think there's an opportunity for someone outside the box to make a splash and make this roster at RB.
  8. I mean, if you have the balls to list a nearly nine figure property the least you can do is make a YouTube video. Hell, our realtor did that for our house in CO and it was listed and sold for a little bit less than this.
  9. Honestly though, the price seems like an absolute pipedream. It's kinda in no man's land. Too far from Boone/Blowing Rock. Not close enough to the types of bougie places that are going to attract near nine figure buyers.

  12. Honestly, the QB snap management this off-season and preseason should be completely about the development of Bryce Young. The trade we made to get him says everything about what we think about Matt Corral. Signing Andy Dalton as a vet mentor and backup says a lot too. Corral is an afterthought. Not a single snap should be taken from Bryce solely to allow for the evaluation of Corral. We've cast our lot. We've hooked the franchise to Bryce Young.
  13. We didn't lose the game because of Kasay, but damn it was definitely an egregious error from a great kicker.
  14. As much as the staff deems necessary. It's nice to actually have a staff that I trust to handle this. I honestly didn't trust any previous staff to develop a rookie QB. Without Cam's tremendous physical talents I'm not sure that situation plays out like it did.
  15. I'm just fine with not being one of the medias preseason darlings as an emerging contender. Seems like they flop more often than not. Or maybe that's just because it always seems like it's the Cowboys.
  16. It was all about the Benjamins, per usual. Which is fine. It is business for them after all. But don't go whining and crying about the QBs you've played with talking about wanting to play with an elite QB and then sign up to play with the Titans.

  18. Just gonna be honest, if baseball completely ceased to exist I wouldn't even notice until someone else pointed it out.
  19. Gonna be honest, I would've taken the picks. You're not just getting two 1st rounders, you're also getting all the cap space that Burns's extension will eat up. With that said, I hope Burns is absolutely dominant in our new defensive scheme and makes any thought of regretting not taking that trade offer laughable.
  20. A lot of truth to this. I'm not certain that it would've gone any different no matter what, but the way the roster was built Cam had to carry the offense. I mean, we did TRY to put some receivers around Cam, we just chose poorly with KB and Funchess. The utter failures on the OL was pathetic though. Even our studs Gettleman either inherited (Kalil) or fell backassward into with Turner (3rd rounder) and Norwell (UDFA).
  21. Oh for sure. A legit franchise QB on a rookie contract is the best roster asset in the NFL. There's not even a close second.
  22. I wish we had been better positioned to capitalize on Brown's and Burn's rookie contracts. Because yeah, they're gonna be expensive moving forward.

You can't even tell the Chargers left San Diego in 2017. Now consider the potential impacts spending those hundreds of millions on different municipal investments. Public spending on pro sports stadiums is just bad business.
